As in almost any home, the thought of meatballs brings back fond memories of our grandmothers preparing them on Sundays, accompanied by a pot of steaming ragu. That aroma filled the house, promising a comforting meal full of family love.
Today I bring you my version, full of memories and flavor. You can enjoy them as they are or why not, prepare a good pasta dish to accompany them and make the experience even more delicious.
Ingredients for meatballs with tomato for 4 people:
- 400 g veal minced beef
- 200 g bread (preferably several days old)
- 1 clove garlic
- Fresh parsley (to taste)
- 1 egg
- Salt and pepper (to taste)
- Grated Parmigiano (to taste)
- 100 g Edam or Provolone cheese, cut in small cubes
- Water or milk (to soak the bread)
- Sunflower oil (for frying)

Preparation:
1-Prepare the bread
Soak the bread in water or milk for a few minutes. Once it is well soaked, drain it completely and crumble it into a large bowl.
2-Prepare the meatball mixture
In the bowl with the bread, add the ground beef, egg, grated Parmesan cheese, Edam or Provolone cheese cubes, salt and pepper to taste, and finely chopped garlic and parsley. Mix everything carefully until the ingredients are well integrated, but avoid overworking the dough so that the meatballs are tender.
3-Form and fry the meatballs
Heat a frying pan with plenty of sunflower oil over medium-high heat. While the oil is heating, form small balls with the meat mixture. Fry them in the hot oil until golden brown and well cooked on the outside.

4-Drain and combine with the ragout
Remove the meatballs from the oil and place them on absorbent paper to remove excess fat. Then add them to the previously prepared Neapolitan ragout and let them cook for a few more minutes to absorb all the flavors.
5-Serve
Serve the meatballs with their delicious ragout. You can enjoy them alone, with a side dish or with a good pasta dish for a complete experience.
