Ingredients for 4 servings of Scaloppine al limone
- 8 thin slices of beef or chicken breast fillets
- 3 lemons
- Salt and pepper (to taste)
- Flour (to flour the meat)
- Butter (enough to brown the meat)
- ½ glass of white wine

Preparation
1- Prepare the meat
Lightly flour the meat slices on both sides, making sure to remove excess flour.
2- Browning the meat
In a skillet over medium heat, melt enough butter to cover the bottom. Add the floured beef slices and fry until well browned on both sides. Season with salt and pepper to taste.
3- Deglaze with white wine and lemon juice.
When the meat is browned, pour the white wine into the pan and let it evaporate completely, which will provide a deep and balanced flavor. Squeeze the three lemons and pour the juice over the meat.
